Unter der aktuellen Leitung von Massimo Malpighi werden j\u00e4hrlich ca. 10.000 Flaschen pro Jahr in die ganze Welt vertrieben. Der <strong>Aceto Balsamico Tradizionale<\/strong> macht dabei aufgrund seines Preises und seiner begrenzten Verf\u00fcgbarkeit den kleinsten Teil aus. Die Kunst, einen echten Balsamico nach alter Tradition herzustellen, ist den Malphighis in die Wiege gelegt worden. Dieser junge <strong>Affinato<\/strong> (gereift) mit creme-farbener Kappe, welche darauf hinweist, dass dieser Balsamico in Spilamberto abgef\u00fcllt wurde, ist ein guter Einstieg in die Welt der Tradizionale und geh\u00f6rt zu den ersten ABTMs die ich in meiner Balsamico-Laufbahn gekostet habe. Er ist 12 Jahre in den Holzf\u00e4ssern der Acetaia gereift und jedes Lot wurde vor der Abf\u00fcllung verkostet und benotet.<\/p>\n<p>Immer wieder greife ich auf diesen Tropfen zur\u00fcck und nutze ihn zum Garnieren von ausgew\u00e4hlten Salaten oder einem Carpaccio.
