Juni 2026 wird in einem kleinen Ort bei Modena entschieden, wer den besten traditionellen Balsamico des Jahres gemacht hat. Die meisten Menschen haben nie davon geh\u00f6rt. F\u00fcr uns, die wir seit Jahren mit Familien-Acetaie zusammenarbeiten, ist es der wichtigste Tag im Balsamico-Jahr, und in diesem Jahr fiebern wir ihm besonders entgegen, denn es ist die 60. Ausgabe.<\/p>\n<p>Der Palio di San Giovanni in Spilamberto ist kein Pferderennen, auch wenn der Name das nahelegt. Es ist der Wettbewerb, bei dem der echte Aceto Balsamico Tradizionale di Modena seine K\u00f6nigin und seinen K\u00f6nig k\u00fcrt. Wer hier vorn landet, hat \u00fcber Jahrzehnte etwas geschaffen, das man nicht kaufen, sondern nur warten kann.<\/p>\n<h2>Was der Palio di San Giovanni ist<\/h2>\n<p>Ausgerichtet wird der Palio von der Consorteria dell&#8217;Aceto Balsamico Tradizionale di Modena, der H\u00fcterin der Tradition in Spilamberto. Rund um das Fest des Stadtpatrons San Giovanni, des Heiligen Johannes am 24. Juni, treffen Hunderte von Proben aus privaten und famili\u00e4ren Acetaie ein. Jede stammt aus einer Batteria, einer Fassreihe, die oft seit Generationen gepflegt wird. Bewertet wird blind, allein nach dem, was im Glas ist.<\/p>\n<h2>Wie ein Sieger gefunden wird<\/h2>\n<p>Die Bewertung \u00fcbernehmen die Maestri Assaggiatori, gepr\u00fcfte Verkoster, die jahrelang ausgebildet werden, bevor sie urteilen d\u00fcrfen. Sie beurteilen jede Probe nach festen Kriterien: Dichte und Fluss im Glas, Farbe und Glanz, der Duft, und schlie\u00dflich der Geschmack mit seinem Spiel aus S\u00fc\u00dfe und S\u00e4ure und seiner L\u00e4nge am Gaumen. Ein Sieger-Balsamico ist nie nur dunkel und s\u00fc\u00df. Er ist ausgewogen, vielschichtig und h\u00e4lt am Gaumen lange nach. Genau das unterscheidet einen \u00fcber Jahrzehnte gereiften Tradizionale von allem, was schneller entsteht.<\/p>\n<h2>Warum uns das \u00fcberhaupt interessiert<\/h2>\n<p>Wir f\u00fchren keine anonyme Massenware, sondern importieren von Familien, die wir kennen. Der Palio ist f\u00fcr uns der ehrlichste Qualit\u00e4tsma\u00dfstab, den es gibt, weil hier nicht das Marketing z\u00e4hlt, sondern das, was \u00fcber Jahrzehnte im Holzfass entstanden ist.
